What a great video. Inspiring.
For those of us who like to be more liberal with the glue, I would have sealed the wood around the joints before glue up. Then no worries about wiping off any squeeze out staining that lovely oak.
Although I’ve just seen that you are going to fume the oak! So not appropriate for your project here.
Regarding drawbored pegs: It looks like 3/8" dowels were used in this video. Would 1/4" or 1/8" be strong enough to use for this?
While 1/4" pegs might be enough (depending on what they're made of, of course), looking at the size of the structure, I'd say 3/8" is about structurally and visually right.
