I will be making and installing white oak frame and panel doors on kitchen cabinets. I love the way that quarter sawn white oak can look but im scared to use it because it can look sort of.. oak unlimited-ish (I dont know how elso to explain but somtimes it looks very un-classy).
Im hoping to get tips from you guys on what product/techique you all might suggest..

"oak unlimited-ish" I think I know what you mean -- it's that everywhere-you-look commercial, generally red oak, look. It started back in the 1960's, early '70's and continues today. Quartersaw white oak would give a different appearance, since you would have rays showing and not the cathedrals that are so dominant in plain-sawn red oak.
What "tone" are you looking for? Light, medium, dark.

thanks for your response forestgirl. I think you nailed my concern there.. I want a light tone and I've finished white oak before (with a wipe on poly--minwax semi-gloss) and the tone darkened up enough that I'm nervous with this big project.I want a finish that will darken as little as possible, be as matte as possible, easy to apply (I'm a carpenter and have little experience finishing anything but fir) but be durable enough to protect a kitchen cabinet door from the moisture and solvents that they will no doubt be exposed to.thanks..______________________________________________
