What are we looking at? I want to say it's a table apron, looking down from above?
Looks like a cross-grain glueup on the faces. I think the leg (if the end grain is the top of a leg) will expand and open the miter.
Agree with the above, not something I would do. When you see some pieces of furniture with stable and unmoved bread boards or miters, you are looking at plywood or veneer over plywood. I have had shrinkage on a dining room table with breadboards, and just repaired a mirror from Target for DIL that had a 3/16" crack due to wood shrinkage. Hopefully the coffee table I just finished out of hickory with breadboards will not shrink much. 'Hopefully not much.'
