I am new to carving and practicing the ball and claw. What is the difference between African and Honduran mahogany in respect to carving? I have never used African to carve with. Is the grain similar? etc. etc. Hopefully someone with experience carving will be able to tell me.

Cuban mahagony is God's gift to carvers. Honduran is a close second. I don't know if African lives up to those two, in terms of carving characteristics.

I can supply you with a small piece of African and Honduran if you would like to see for yourself. I think that African is coarser and harder.

I have carved about 2 dozen African Mahogany mantels over the last year and most of them have been pretty tricky to carve because of the ribbon grain. The ribbon grain tends to tear out easily and you need to work it from both directions to get a smooth finish. Other mantels that i have carved from the same wood behaved rather well. The ribbon grain does have a great look.
