I am building a dresser out of maple, plain sawn- no birdseye or curly boards. I am interested in finishing it to give an “aged” look. I’ve thought about a light brown dye stain then a boiled linseed oil sealer following up with a top coat of oil based varnish.
Any thoughts, or other cool recipes that worked?

You want an aged but not necessarily an abused look, right? If so then I think you're on the right track. Personally I would go for more of an amber colored dye. I've had good success on a variety of really blond woods where an aged look was desired by using a favorite amber dye recipe.
Equal parts of yellow, orange and brown, then reduced to whatever color strength you like.
As I'm sure you probably already know, it's usually safer to go with a really weak strength and then sneek up on the color with multiple applications until it looks the way you want it to.
