I recently used a two part epoxy, mirror coat, over some curly oak with very good results. Be prepared for some air bubbles in the first application. If you let it set up for say 30 min, and then scrape it off with a rubber scraper, it makes for a smooth and sealed surface for a final coat. A lighter makes short work of popping bubbles if they arrise in your final application. This product is also a prime candidate for rubbing out.
You might consider something like this. I believe there are similar products out there.

Lou,
What's wrong with the CV you use? Campbell has a line of European finishes, including PU, if you need a tougher finish than the CV.

Paul, whats the cambell product # on the pu
I don't use Campbell's finishes (I do like some of their stains though) but they have a good website with data sheets for all their finishes Lou. They call their interior PU "EuroBild." You can check out Campell's data sheets at this link - http://www.mlcampbell.com/resourcecenter/pi_resource.aspI've been using another brand of European PU and have nearly switched to it exclusively. Two coats looks and feels fantastic, it's very easy to sand, great pore fill ability, rubs out easily, etc., etc., etc.Paul
