Looking to use some of these. Is there a rule of thumb to the size of hinge VS the thickness of the wood, If the wood is one inch think, what diameter would i use?

The key thing to keep in mind with these particular barrel hinges are that they are designed for light-duty use. Don't expect them to be weight-bearing.
You can find out anything you want to know about these hinges, and about other, heavier-duty barrel hinges, at http://www.soss.com.
I used barrel hinges to open a ceiling lamp. I decided on the size based on a large circumferance for the epoxy to hold in the socket because there was weight the hinges had to support. I've had no problem with this when opening has been required to change bulbs.

I would be careful with the Lee Valley hinges. I like Lee Valley products very much, but believe they have fallen into the China trap when it comes to hinges/handles and some other hardware. If I am not mistaken, these are imported and the last style hinges I purchased for inset doors had excessive play (diff style granted). Given the accuracy to get these too work correctly, sure would be shame for a poor quality hinge to cause probs. The Soss hinges suggested are a quality european hinge (see attached). Hafele distributes them, but this page is missing from the one on my computer (pg 438).
Good luck
