Not to be a smart a$$, but thick enough for what? To prevent deflection? To be heavy enough to keep the bench still under heavy planing or pounding ? To look beefy? To ....?
1 3/4 is decently thick. Lots of bench tops are around this thickness or thinner and just look beefier due to wide aprons.
