I’ve built several tables with a bent laminated apron. The apron section is 3″ high x 17″L with qty. 5 1/8″ walnut laminations. I bend to approx. 12″ radius. It seems a waste of money to bury walnut or other expensive wood behind the top laminate. Are there any drawbacks to using cheaper wood where not seen? If not, any suggestions for a cheaper wood that will bend easily?

there's nothing wrong with using a secondary wood in the core of a bent lamination. I'd say that any clear, straight-grained wood would be fine. Poplar is often used for this.
