I am planning a large built in cabinet/pantry. It is to be painted and I am curious about the best wood to use for a painted surface to achieve a smooth surface with little or no grain pattern.

wood for painting
I always use poplar when paint is the finish. It is stable and has been used for a long time as a secondary wood in furniture. It shows no grain at all under paint.

where to use it
I hope that you are going to use cabinet grade plywood for the case and the show surfaces (poplar or whatever) would be painted solid wood.
Making the cabinet out of solid wood would be heavy and expensive.
