I am trying to stain white maple veneer and hardwood so that it is the same color and not be blotchy.

Use an aniline dye.
Use Transtint aniline dyes in water. Go to http://www.homesteadfinishing.com to buy the dyes and you can read hundreds of posts on the subject. Woodcraft also sells the Transtint dyes. To totally avoid blotching, you will need to spray the Transtint dyes in light coats and not wipe at all. I do this all the time and it works perfectly. After the dye dries, seal it with a 1# cut of shellac brushed on then whatever finish you wish. Jeff Jewitt runs the Homestead Finishing site and his books on finishing are the best reference on the topic. Jeff can help you with a spray gun that will run off your air compressor. I wiped on stains and finishes for years on maple and got poor results. With Jeff's help, I now get great results on maple without blotching. By the way, Fuhr 355 water-based varnish is an incredible finish on maple either sprayed or brushed.
