A variety of glues would work. However for wide surfaces like that I like to use sprays. You get even, full coverage. 3M has a couple products (#77 and 90 IIRC) that I've used with success on a variety of surfaces including wood and leather.
I thought that hide glue was the glue of choice here.

I would side with Derek. Hide glue, hot if you have the means.
The company I buy my leather from recommends wall paper paste. I made a cherry desk with a leather insert and glued it with the wall paper paste and it came out fine.
!lb of guttapercha. 4oz. of indiarubber, 1oz. of pitch, 1oz of shellac, 2oz. of linseed oil. Melt all together, it will harden when kept and must be melted for use.
Receipt pre 1913. Do let us know if it's any good.

I have used wheat paste to adhere leather to wood. I my case it was for relatively small pieces for writing surfaces on a desk, and a boarder on a games table.
While I'm a strong advocate for hot hide glue, I would hesitate to use it, for fear the heat required to activate the glue when it gels, would damage the leather.

You can't get any easier than spray contact. I don't wait for it to det to the normal tack. I just spray it on, and lay the wood onto the leather, then turn it over and smooth it out from the middle with my hands. it will cure afterwards. If you wait to stick it after the glue is dry, getting a wrinkle is a disaster.
Keith, agreed. This is an instance when the modern alternatives are so much better.Why mess with stinking hide glues, egg and flour recipes etc when there is such a choice. The problem actually becomes one of selecting the most appropriate glue....Philip Marcou
