I am wondering if anyone knows where to get butternut plywood preferably in Canada but not a must.

I've never seen it, but that doesn't mean it doesn't exist.
I'd call a local hardwood dealer, and see if it's something they can get for you.
I have used this company for custom lay ups in years past. Might be worth a try depending on your needs. https://www.dvcplywood.com
You can get veneers from Oakwood Veneers, among others, if you want to make your own panels.
You had me curious so I called Robert's plywood:

...and no dice. They did not even have the veneer in stock, although there WAS a stock number in the system. Still some shortages out there. If they had the veneer they would do the layup for you, but that would be pretty pricey.
Thanks for the replies think I may have to look in to veneering. That will probably mean some new tools so there is an up side.
How much surface do you need ?
It’s gonna be a lot a friend wants to make a show wagon for his horses
Seems like something that might get hard use, and maybe outdoors? I'm not sure I'd use plywood or veneer.
Solid stock is widely available, so nice beefy shop-sawn veneer is a no-brainer.
Not sure I would use butternut for that purpose, it is very soft.
Try Boulter Plywood in Medford MA-https://www.boulterplywood.com/
Had a Farm in Flesherton Ontario and a neighbor who had a sawmill showed up with a pickup load of butternut. He indicated that you cant give it away and proceeded to dump it in my barn.It was stickered and left to dry till I was about to do my office.I planed a plank, put some oil finish on it and was delighted with the colour.Had some ply veneered and the project looked great.
Wood is soft, does not take detail ,but it works
