dsiddens, Go to a cookware or restuarant supply store ask to see a 'Mandoline"
This is what youuse to make cole slaw/ krout/ french fries/ sliced anything.
Be sure to get the 'Pusher' handle to save your knuckles Or once you see a mandolene, you can make one easily. Mine is made in German, and I use it most days in the kitchen. (Pepperoni anyone? Stein.
I can take a photograph of mine with a tape measure next to it if you want.

Piffen, I,m butting in but that's a good idea
Print on graph paper and take top and side veiws. Stein.
I don't have grid paper that big but the tile on my office floor is 12" with a 1" pattern. Maybe that will be a help. I believe I could derive a pattern and cutts package from these photos...
The blades on this are definitely rusty. It's been hanging out in the garage for a few years. The back is burned or etched with a trademark -

The blades seem to be at 45° and are set with screws, one to hold and one for set angle adjustment on each side. The top of the blade is the flat side and the bottomn has the sharpening bevel. Removing the hold screws from top lets the blades out for sharpening. Turning the adj. set screws sets depth of cut..

I suppose I should have adresseed the previous to you. Good luck with your project..

dsiddens, If you make your own shredder, use stainless steel for the blades and it won't rust.
A good idea to slice any rounded veggies, is to square off two adjacent sides of the spud/turnip/etc etc before slicing/shredding and ride the fence as you slide.the flattend bottom Stein/
dsiddens, Piffen has the best idea.
To copy the dimentions and details (dadoes/ joints/blade angle,) copy the excellent photos on 1/4' graph paper and by comparison to his tape measureyou can reproduce the same shredder in any kind of non-toxic wood.
For blades, try to cut up some nice stainless steel wide butter knives and file the edges to a similar bevel.
You can drill stainless with a slow speed high speed drill bit also countersink for flathead wood screws. Stein.
