I have cabinets that have some sort of poly stretched over mdf……..painted white.
I am planning on making new wood doors and need some ideas how to do the inside
of the cabinets………..Is this type of covering paintable ? Need some recomdations.

I'm not familiar with the poly material that your talking about. Could the cabinets be made from Melamine? That's a type of sheet good with a laminate surface over an MDF core. The laminate comes in different colors and it can't be painted over.
As for finishing the inside along with your new wood doors, that might not be necessary. A standard kitchen cabinet makeover would only focus on new doors and a new face frame, as well as coverings for any exposed cabinet surfaces.
If you replace the doors and face frames with matching materials, it's not that important what the interior cabinet boxes look like. On any exposed exterior cabinet surfaces you can apply a new panel. I would make those panels match your doors and build them at the same time with the same materials.
I may not have answered all your questions so please write back and let me know if that covers it.
