What do you like?
Clear, amber, oil, water, wax, etc
A clear finish that enhances the colors in the wood and does not darken over time.
Water based polyurethane stays clear and does not yellow (amber) like oil based.
Lacquer is another option.
I like Osmo products. Easy to apply, durable and has a nice "feel" to it when its cured. Also spot repairable if necessary.

I applied a couple coats of Arm-R-Seal to the Canarywood panels in this vanity, prior to assembly, because I like what an oil finish does for the appearance of this wood. I plan to spray the whole thing with General Finishes High Performance when I get a warm day or two, both to help it survive living in a bathroom environment and avoid ambering the ash legs. If the whole project were Canarywood and kept away from moisture, I'd probably skip the water based poly.
