I have just recently aquired a beautiful walking staff. It’s a beatuiful piece of Eucalyptus. I am going to attempt to do some carving on it. In the past I have seen a pattern that looks sort of like a Celtic criss cross pattern. This is where the center has been hollowed out. I have looked for pics but have not been able to find any or a name for the pattern. Any suggestions would be helpful.

There are several books out there about celtic woodcarving patterns. Here is one:

Do a google search, numerous items should come up.
There are also many websites that show other carvers celtic work. You may want to look at some of these, and design the pattern yourself. I've carved a couple celtic knots in basswood. I looked at other examples and designed them myself from found photo references.
