Hi!
I need to build a jig where two vertical surfaces will move in opposite directions at the same time. For example, suppose I wanted to center a 1×3 in the jig along the 3” surface. I want to be able to place the 1×3 between two sliding verticals, turn a knob, and have the verticals close on the 1×3 with it centered equi-distant from the verticals.
What kind of hardware would I use? I need some type of screw drive that turns one bolt in one direction and another in the opposite direction at the same time.

I'm not following your objective here. Perhaps if you explained what you are trying to accomplish with the jig we might come up with a solution.
Centering jig
I imagine a kind of plier with a spring under the table, that open or close equaly, driving the verticals...
It may be simpler to just always mill your stock to a series of preplanned exact dimensions and have some blocks set up that match each and then trade them out as you work.
. . . but here goes other wise . . . basically these have one screw with two opposite direction threads cut into it. Note you can turn the vise on its side for long stock.

A self centering dowelling jig looks like what you need. They clamp down using a reversing threaded bolt to center the hole bushings. More info on what the jig will be used for would lead to more specific solutions. Cutting centered slots? Drilling centered holes? Simply marking the center?

I almost fell over when a topic came up that's not spam....
There are a number of commercially available centering clamps for industrial use, generally a threaded rod held from moving right or left with right hand threads on one end and left hand threads on the other much like a doweling jig.
A commonly available threaded rod is something out of a woodworking clamp, or right and left hand thread-cutting dies are readily available.
Other designs use something like the mechanism in a pair of parallel-jaw pliers, or similar to an expanding sweater drying rack.
