I need some help with how to install a curved backrest on a chair. I’m wondering how they did this? Do they cut a notch on the foot (if so how do they usually do it seeing you have to install a curve backrest rather than a straight one) or simply screw it down?

That notch is a section of the arc of the backrest. It is short enough that I would treat it as a straight cut.
It looks notched. It's a pretty gentle curve, and that radius, over about an inch and a half wide post, is essentially flat.
