I have a customer who’s very concerned that the cherry pieces will turn into too dark shade over the time and that he would not like them any more, since he loves the color of new made pieces.
Would peroxide bleach help, finished with water based poly or….?

Cherry will change over time but I don't feel it's that dramatic. keeping it out of direct sunlight will help. A water based poly won't stop the color change, it just won't yellow over time.
The change in the cherry will occur gradually. The only absolute way to determine this is to make a sample with the same wood, finish it and let your client live with it for six months or longer. I know it doesn't sound practical but that will be the only sure fire way of not having the customer come back and say they are unhappy.
Please don't bleach it. To me that's cutting off the nose to spite the face.
