I plan on building a cherry and maple trestle dining table and I cant decide what is the best finish to apply. What do you recommend??

A dining table will see a fair amount of abuse so I would suggest any of the following;
A hard varnish like Behlens Rock Hard varnish. There are many hard varnishes ( short oil varnish) out there and if you ask 10 people you'll get 20 different suggestions. Varnishes will add a slight amber cast.
A polyurethane will be a hard surface that will have a yellowish cast to it. It will be difficult to repair if required.
A catalyzed lacquer or conversion varnish. Both require spray application.
If I were to pick a hand applied finish I would choose a varnish over a urethane. I simply like the results better. This topic gets very PASSIONATE from opposing points of view.
