It seems that using cherry wood in everything is hot right now. Cherry in kitchen cabinets seems common on the high end (must be over 50% of the jobs around here right now). It has occurred to me that in just a few years all these nice cherry cabinets are going to look like 1980’s oak (out of date).
What is the next trend and is it time quit cherry and move on?

I grew up in a house in the 50's that had cherry paneling (6+ feet high in a 12 foot ceilinged room). It was drop dead beautiful. Cherry will NEVER look like 80's oak --it is just a much more beautiful wood that doesn't come off the wall at you.
Peter, around here Cherry is popular in high end applications since it has a significantly richer appearance and I think it shows off high end brass hardware more elegantly than oak. Oak is not on its way out like avocado appliances by any means, it is still a reasonably priced medium for use in mid level homes. The gossip around here is that people are steering towards maple as an alternative to oak because it is easier to care for. Tighter grain, easier to finish and won't build up soil like oak supposedly
If a person was requesting Cherry cabinets from me, I would be sure to inform them about its natural tendency to darken which will make their kitchen appear to be shrinking in size over time. I would be very hesitant to do a job for someone who was not aware of these facts. I think I hear what your saying. I've never heard anyone say that their kitchen was to light and airy, its usually the opposite and guess what, all that beautiful Cherry gets painted white.
