I’m working on remodeling my bathroom, I’ve purchased some heartwood cherry for trim around my stand up shower. Does anyone know what kind of finish I could use to help protect from the water…. some of the trim will be near the shower and wet some of the time.

You probably want to use an epoxy finsh, or something that would be at home on a boat. It would also be a good idea to finish all sides of the trim, not just the exposed faces, before it's installed. That includes any end cuts, so have the finish handy as you cut pieces to fit.

Was watching HGTV the other day while they were showing off one of those stupid rich homes were the owners hobby is spending money. The kitchen counter top was a combination of granite and cherry. My first though was that it was formica, corian or something, but no, it was cherry. Sorry, if they said what it was finished with I didn't catch it, but I'd like to know that one myself.

Frankly, Travis, I don't think this is a good idea. I spent too many years as a ceramic tile setter doing shower repairs involving leaking shower pans, iknnapropriate materials and the like to even *consider* wood (with the possible exception of teak or perhaps cypress) anywhere near the shower compartment.
It just isn't something I would do is all.

... but if you're just bent on doing it anyways, my vote is with the "something on a boat" idea - marine varnish, and multiple coats.
