I’m building a dresser using Cherry ply for the sides. Customer wants a natural finish to match the bed I built for him. (Wipe on clear poly) I’m wondering how the color will blend over time, specifically, will the ply darken as the solid Cherry does and match? Thanks, agriffee

The cherry ply veneer should react to light just as a solid piece would react
to light.
Have you educated your customer about cherry and it's tendency to darken over time? If there has been a good period of time between the two pieces construction then they could look somewhat different in tone.

I built a cabinet mixing solid cherry and cherry plywood about two years ago. THe plywood darkened somewhat quicker than the solid, so it looked funny for awhile, but the colors match now.

Have you considered tung oil for the first coat? It does a very good job of making the solid and ply match, and WOP or shellac goes over it well. Better yet, try this
After finish sanding up to 150, do one wet coat with tung oil, then wipe and let dry. The next coat is done by wet sanding (with the grain) the wood surfaces with 320 wet/dry paper lightly with the second coat of tung oil. You won't need much oil. The sanding creates a fine slurry, which helps fill the rough random spots we all miss during first sandings. Gently wipe the slurry off with a soft rag, and let dry. You should have a very smooth surface. Then a light coat of Bison clear wax. when th eoil is fully dry. You'll be very pleased with the finish and textures.
I'm interested in how you can afford cherry plywood with the extremely high cost of plywood. I brought home over 600 bd.ft. of cherry from the sawmill wednesday and it cost me $5.00 (that's right,.. five American dollars and no cents..)
Of course last night I brought back only 300 bd.ft. of fiddle back maple and it cost me $400.00.........
