I would like to replace the veneered top of our 42 inch round, sliding top and pedestal kitchen table (also has a 17″ leaf) with either a 3/4 inch or 1 inch solid cherry top, but I’ve been reading a lot of horror stories about wood movement when screwing the top down to the apron. The plan is to remove the sliding hardware and reattach it in the same position using the solid top.
Can someone advise me on whether or not this will be ok to do and if there a good way to attach the solid top to allow for movement? Also do either of the thicknesses mentioned matter?

The thickness matters little--it's basically an aesthetic choice. You do need to allow for wood movement in the cross grain direction, whether by having elongated screw holes to allow the width to change, or with figure 8 clips that would swivel to accommodate the change in width. With the grain movement will be minimal.

glued to the skirt or any other joining member.
