Curious how people like to make these clamping jigs, if at all.
Its not how I usually clamp miters but I’m making 6 waterfall benches and need some extra clamping pressure

You've got the right idea. Do yourself a favor and add a spline or biscuits to your miter joints. You don't necessarily need the strength, but the biscuits or splines will keep the joints aligned while you are setting the clamps and keep them from moving under clamping pressure.
I hot glue the 45 degree pieces shown in the first photo to each piece to be clamped. I do this ahead of time. Then when the glue sets up it's easy to peel off the hot glue.
They also make these you can buy. Depending on who you go with, they have various levels of quality. They work.
As mentioned, you need something to hold alignment, or you'll play hell.
Lamello is another option to consider if you make these often. It will save you a lot of production time and effort.
