Have you checked to see if a local JC or Parks Dept runs an adult ed woodworking program? Most of the woodworking-specific schools I've seen are located in the New England area. Some offer week-long workshops, others have longer programs. But, you have to arrange to stay there.

Here is the approach that I took in Houston:
First, I subscribed to all the wood working magazines that I could find. Second, I took a few classes from a local woodworking tool store. You know the one that "Makes wood work"? You have one in FW. Most of the classes were short and single subject and not too expensive but you will soon outgrow their usefulness and want something more challenging. Third and the most cost effective are the Internet blogs, videos (mostly free) and this site as well as many more. I don’t know how I would have ever learned woodworking without this low cost and convenient outlet for information. And finally I have a large selection of books and DVDs that I have purchased. Some were very good and others not so good. Oh, I can’t forget the loving wife that lets me spent almost all I want. But there is a downside to her generosity it is taking her to a woodworking tool show. Sometimes my truck isn’t large enough to haul all of the loot home. I still have unopened items in my workshop from several years ago. Well, we all have our burdens in life and I’ll have to continue suffering with this one.

Excellent Classes just an hour away
I am not familiar with classes in the DFW area, howver there is an excellent teaching facility just outside of Waco. A master craftsman named Paul Sellers and a group of like minded folks started a community called Homestead Heritage which teaches a host of homesteading skills. Their woodworking programs are outstanding. They have everything from one day seminars in basic handtool sharpening and use to multi-day or week long classes building complete furniture. I learned more about how to properly sharpen and use my chisels and handplanes in one day than I had in years of frustrating trial and error. The teachers are gifted instructors and talented craftsmen. I would strongly encourage you to explore what they have to offer. I gained a great deal of knowledge and confidence while taking classes there. I included a link below to their woodworking website. Curious if you ever found anything in the DFW area. I'm in Fort Worth and wanting to learn. I know absolutely nothing about tools but it's always been something I've desired! Hopefully my lack of knowledge of tools will not be an issue.
