Cocobolo darkens with time until the grain almost disappears. Does anyone know a way to slow down or stop this process? How about an UV blocker in the finish? Obviously because of the natural oil present in the wood, I’m limited to what finishes would dry and not stay tacky and gooey.

There is only one finish that is satisfactory on cocobolo - lacquer.
And there is no way to prevent the natural darkening. Some samples will change very little,and the startling contrast between colors will remain. Many will turn a completely uniform, deep chocolate. You can slow the change down a little with UV inhibitors, but the inevitable is, well, inevitable.
