I am going to strip and finish counter tops in a restaurant that are near the grill area. The orig tops have degraded from grease from the cooking oils as the open cooking area is next to this counter area.As we are doing a complete strip and finish, does anyone have a suggestion on a sprayed finish for this project. Ww reg. use Kemvar on most work, but worry about it holding up under this much abuse.

M. L. Campbell's DuraVar and Kristal catalyzed finishes are about as durable and easy to use as anything I know of that is readily available.
Perhaps the only step above that would be a 2-component urethane from Hesse or one of the other German manufacturers. I don't know where you are located, but I have a source in Kansas City for these coatings. Email me for further info.

*No finish will hold up for more than a couple of years to that sort of abuse. Your best bet is conversion varnish or catalyzed lacquer: they're nasty finishes to apply, but they last longer than any other finishes.
