I’m new to turning. I have seen knitting needles and chopsticks with contrasting wood used at the ends. Gluing would be end grain to end grain. Is there some other method that is used? Some of what I have seen is pretty thin in diameter.

My wide (oh no, that is not Freudian, she is thin as a rake) is bugging me (politely) so I'm just bumping this and hoping someone has an answer.
Yes, it's end grain to end grain, but on chopsticks and knitting needles, the glue joint isn't carrying any great load, either in tension or in shear. I wouldn't hesitate to glue end grain to end grain in a situation like that. I'd probably use epoxy instead of yellow glue, just because I'm neurotic.
If you're thinking of making something where the joint is loaded, you can turn a round tenon on the end cap and drill a hole in the main body, for a substantial increase in glue surface area.

OR...If you are real patient,, graft a walnut scion (sp?) to a cherry tree..coulpla yrs. and they are one! Ta-da..
Another option would be to join the cap piece to the shaft with a spline to increase the glue surface. The spline would show but might be a nice decorative element. I once made a top spinner for a kid and joined the round handle to the yoke with a contrasting spline.
DDD have you ever seen the joint they use on pool cues, it looks fairly complicated but there was an article a few years ago on how to make it and it wasn't as bad as it looked. Can't for the life of me remember where I saw it, may be some one else out there remembers it.
