I am building a coffee table and I will use mortise and tenon joints to join the aprons to the legs. The legs are 3 1/4″ square at the top and the aprons are 4″ wide and 1″ thick. I want to leave a 1/4″ reveal where the aprons meet the legs. I am planning to make the tenons 1/2″ with 1/4″ shoulders on the faces. On the top of the tenon I plan to leave a 3/4″ shoulder to stay a greater distance from the top end of the leg. Do these dimensions sound correct? Or is there something I should change?

They sound fine to me. What determines the width of the mortice is what you have available to cut it with. See link below for guidelines.
What you're cutting is a corner M&T. You may find that the mortices run into each other. In this case, you'll need to mitre the ends of the tenons to allow you to get the joint closed
