I am looking for a publication or a Web site that provides information about the corrosiveness of various woods: pH, outgassed volatiles, degradation products, etc. My specific need is to determine which woods are safe to use in making knife handles and sheaths and boxes for presentation and/or storage of knives and guns. There’s a fair bit of information online about manmade products, such as plywood and OSB, but nothing extensive or definitive on natural woods. Any suggestions would be appreciated. Thanks.

Have you checked with the USDA Forest Products Laboratory?
Excellent suggestion. I also will be checking with what used to be called the Institute for Paper Chemistry. A couple of other ideas came to me while following up with what you suggested. If anything pans out, I'll post the results.
