I painted a closet door last year and now it has cracks along one panel seam. Is there a way to paint so the changes in humidity don’t result in cracks?

Scrape it and paint it now and it will be covered.
Short of using molded composite doors, any door using real wood is likely to develop cracks in the paint film over time as the panel shrinks and swells. By painting the panel in it's driest part of the season (generally late winter), you won't broad bands of the old paint showing as the panel shrinks.
