Build a cabinet or bookcase under soffit to match the full width and depth of the soffit, trim it to match the cabinets.
you might put 1/4" ply to match your cabinets and over lay trim with with a style that matches your cabinets or faults door. Any number ways check out some remodeler web site to look for ideas.
There are a few simple things you could try if you can be ok with not having them look "like the cabinets". You could just add a semi-largish half-round to the bottom of the soffit, on the vertical surface. This will "break" the transitioning edge of the soffit and give a nice step out before going into and down to the cabinets. This can also be done as the others have said, with stained finish woodwork that you match to your cabinetwork. You can also add a simple, panel mold, like picture framing, to create the appearance of panels in the open space that would be above this half-round and below your crown (paint-grade or stain-grade), in any spacing you feel. Use sizes you feel would "balance" spatially with your situation.....use your mental eye to see what will feel right for your wishes. Good Luck.
