I saw one of those sticks for pushing/pulling hot oven racks. This one was shaped to look a bit like a squirrel. How do you cut tight curves through 3/4″ oak?

Use a drill bit that matches the curve of those parts too sharply curved for the saw to follow, and then cut with a bandsaw if you have one. If not, a scroll saw (what I think of as a jig saw) or a coping saw or scroll bowsaw will work, though more slowly. If you find a good way to anchor the work and support the bottom of the saw, a jigsaw (what I think of as a sabre saw) could work.
If the resulting cut is rough, you may have some cleanup to do with rasp and file.
