My oak on some cabinets seem to have open pores and turned black. My house flooded and it was humid then summer came and they sat in the home without a lot of ac in the arizona summer. Could that account for this damage and how would I repair it?

Get someone in there that is qualified to classify mold before you touch it. It might be a serious health risk.
A light wash of hydrogen bleach will kill any mold concerns with minimal damage as compared to something like chlorine bleach and doesnt need to neutralized like chlorine.
I have found that Murpheys Oil Soap in warm to hot water and a white terry cloth towel and alot of elbow grease removes water stains better than anything. Oxalic acid will probably be recommended to you by someone...nasty stuff!
