What is your opinion of Danish oil as a general purpose finish for boxes, furniture, or cabinets? How many coats are needed? Does it need to be finished with wax? If so, what kind of wax and how many coats?
I’m attracted to its ease of application and tendency not to pool.

Danish oil is just a very, very thin varnish. It's has very little solids which translates to minimal protection.
The trade off is it's very easy to use. I don't see much benefit in adding more than a few coats of it.
Remember, you won't get a surface coating with it no matter how many coats you do.
Waxing is always optional though not a requirement. When I wax I usually just do one coat.

I usually use BLO (mixed 1/3 mineral spirits), to only (pop) the grain, followed with thinned dewaxed shellac, sanded, then Briwax or Fiddes wax. Fiddes works best on walnut for me.
