I installed an interior stain grade pre-hung pine door, and stained it with Olympic oil-based stain from Lowes. I thinned the stain with mineral spirits, as the stain inevitably became darker towards the bottom of the can. The stain dried without issue. I then finished the door with clear Watco Danish oil, but the finish has remained sticky on the less porous parts of the wood for almost a week now. Is this possible/likely with this combination of products, and – if so – are there any options to fix it???

Scott, it may be the interaction - but maybe not since it's not happened all over.
I only get sticky DO when it's started to go off in the can.
A tip you might try is to thin the DO with mineral spirits about 50/50 and go over a small sticky spot, dry and buff immediately.

Oil based stains have their pigments in suspension. If you don't keep it stirred up, the pigments settle to the bottom of the can and you'll end up with one part of your project being a different color. Do you know those globes sold at Christmas time that you shake and the snow swirls around and then settles out? It's the same concept.
When you use Watco, after you apply it you should wipe the surface down well to remove any excess. Go back after 15 minutes or so and check the surface for any oil that may have come back up and wipe it dry again. Be sure and hang or lay out any oily rags to dry before you discard them.
When the surface is still sticky, you can use some paint thinner or naptha(a faster evaporating thinner) and go over the surface and rub it down with a grey scotch pad and wipe it dry. Another option is to use a fine wetdry sandpaper such as 600 grit with the paint thinner and lightly sand the surface and wipe it dry. Just be careful you don't cut through your stain doing this. It's just a light touch you're using here, just enough to smooth the surface. Wipe it dry with paper towels and let the surface set for at least a day, longer if necessary. You can then apply more coats of watco as desired.
