What a question!
I'm going to forward it to one of FWW's authors, who has worked extensively with antique wood. Not big teak beams, though. He may be able to give you an answer. Meanwhile, you might want to consult with someone who builds timber-frame structures and who works with old timber. He may have some experience with the kind of timber you have.
My one suggestion would be to avoid using plaster of Paris.
