First time doing this and yes I will do a test piece first. Likely no deeper that 2-2 1/2 inches. Two questions – should the wood be sealed with either a quick drying epoxy, something else, or not at all? Second, there are so many brands out there, do you have one that you think is particularly good? Thanks

The products by "SystemThree" have worked well for me. I have found the directions to be spot-on. I would be concerned making a single pour as deep as you propose.
I'm sure there are other brands that will also serve your purpose.
This resin is not designed to pour less than 1/4 inch deep or for thin coats. When pouring 1/4 inch molds or coasters Deep Pour will take between 24 to 48 hours to cure hard to the touch. Deep Pour may remain in it's liquid state for up to 36 hours.

It’s not the brand but the formulation that will allow epoxy to be deep poured. With the popularity of River tables these products are more common now but if you take West System or System 3 regular product and try pouring anything deeper than an inch it will likely result in a total mess , curing so fast due to the exothermic chemical reaction the end result is a porous substance. This product is meant for deep casting and there may be others : https://www.elichem.co.uk/deep-cast-casting-resin-CER
Check out Blacktail Studio on youtube. He does epoxy and river tables and explains in some detail what he does and why and the products he uses.
