I have half a gallon of DA in its original metal can. It’s probably 8 to 10 years old. Smells good. Would I be safe to use it to cut some shellac?

The main way that alcohol goes bad is by oxidation to acetaldehyde and/or acetic acid. If you don't smell vinegar you are probably good to go. Metal has a very low oxygen diffusion rate so I'm not surprised it is still good.
