I would like to build a dining table having a solid wood (likely mahogany) top and leaves that would extend the table to at least 96 inches. I would like it to be rectangular, about 40 inches wide, of simple design, and with tapered legs.
Could you recommend resources to help in designing and building such a table. A resource where I could get plans that I could use or adapt would be ideal? I would also be interested in any books or articles on the general subject of building dining tables that you would recommend.
Also, resources you could recommend or advice you could give on how to ensure the top remains flat over time would be very helpful.

I have no quick answer to your question. Taunton has published a bunch of books on tables that take old articles from the magazine. I would start my search there. I haven't written any on the subject, but I'm sure you'll find more than a few well written articles.
Here's what you need to do though. It's a big table. Get good table extension slides made of either hardwood or metal. You will build your table with a nice leg and apron construction and then cut it in two. Yikes, but it has to happen.
You will run the long grain of your top boards the short ways across the table. The 40" direction. This way you will attach your top to the apron the same way your leaves will be attached to the apron. This way your leaves will stay as flat as the rest of the table top while still allowing for movement. Allow for movement with buttons or table top fasteners, put a good finish on it.
Oh, there's lots of little things you'll have to pay attention to. But get good slides that don't sag too much, and use two or three small leaves to insert rather than one giant one. Have fun with it.
