For securing pattern templates I’ve been using carpet tape from the big box. It works fairly well but I would like something thinner. Any recommendations will be appreciated. Could the same tape be used to secure a blank to a face plate for turning?

I use X Fasten and like it. I don't know about turning, but its great for templates.
FastCap Speed Tape is very thin, but extremely strong.
I use Spectape for thin, and X-Fasten when the surfaces are less than smooth.
Go back to the Big Box and look for the thin plastic (vinyl ?) carpet tape. it works better than the thicker (fiberglass or cloth). On smooth surfaces it is hard to remove. Try warming it with a hair drier or heat gun.
Intertape, recommended by a shop that could have just sold me what they had on the shelf instead.
Intertape gets my vote as well. You don't need scissors to cut it, you can tear with your fingers. It allows repositioning, it holds tight when you add some pressure and it's easy to break apart and remove when your done. It's also very thin.
I’ve certainly never tried it but I would think for turning, only if in combination with usual attachment methods (and not sure how tape would help), never just with the tape. If anyone knows for sure that tape could possibly work, please comment.
For turning I would not use tape. IMO glue the blank to a sacrificial part and cut it off later. Apologies for not seeing the second part of your Q.
