I am planning on making a Cherry Dovetailed Toolbox with metal drawer slides. This toolbox would be similar in concept to the FWW North Bennet Street Toolbox. Is it recommended to add some type of stiffener in the back to prevent the box from racking or will the dovetails prevent racking? Can I simply leave a open back on the toolbox.

I'm not sure I would rely on the dovetails to withstand the forces applied by opening and closing of heavy tool laden drawers. Especially if you want to move the box without removing the drawers first.
I do have to ask the question why would you want to build it without a back? Not having a back to me would be just another opening to let dust into the box unnecessarily.
I wouldn't even think about leaving off a back. Both for dust, and to reduce racking.
Well made dovetails in a case that size should do a ton to prevent the case from racking. It will be a very rigid structure. You can do whatever you want, but usually a toolbox keeps the tools both organized and clean. Leaving the back off works against those goals.
If your metal drawer slides have lubricated bearings they will collect dust and foul that much faster.
I am just finishing up my toolbox.
I used the Bennet Toolbox as a but but mine is 29" wide.
I'm working on the back pieces now and they are shiplapped so they really dont add much to the structural stability.
I will say that my dovetails on the box are pretty stout and I have a 7 drawer layout and there ain't no way this box is gonna rack!!
also, I was really surprised that my 28" wide by 16" deep drawer seems really sturdy even without the bottoms... No racking there either.
All the dovetails were glues using hide glue and left to sit overnight.
