Based on earlier comments from respected users here, I ordered an Earlex 5000 HVLP system while it was on sale at Woodcraft.
For a lot of small things I do, however, the 1qt paint pot may be overkill. Is it possible to use a different manufacturer’s gun (with a smaller container) with the 5000 turbine?

No, probably not. When I broke a part and needed a gun right away, I went shopping. It turns out the trouble is the large air port that the hose hooks up too. It is not a standard pneumatic fitting, but rather a gaping 1"-ish hole in the back of the gun. Maybe, maybe with a reducer, but I suspect that will reduce the amount of air flow too drastically (there must be some reason for the big hole, as you can't buy the system without the gun to my knowledge - that is, unless they want to sell more guns and parts from THEM). That said, soon after the port, the opening is greatly reduced. You may find that a paint sprayer has a similar size port, but likely an equally large container.
So my final answer is: possibly, with modifications.
