I am making cherry cabinets for my kitchen and want to use edge banding on the
front edge of the plywood cases , so I bought some iron on tape. My question is
this , is the wood used in edge banding bleached to make the color uniform?
It has a wood grain and pinkish color, but doesn’t darken when left in the sunlight
and every roll is the same color.

good question, I suppose its not unlikely for cherry, since it is variable. is the bleaching going to effect weather you use it or not?

Do you have a jointer? If so, joint the edge of a board, then shave off a thin slice with your table saw or band saw. Repeat that process till you have enough strips. A bandsaw would be better for this if you have one. I have seen cherry edge banding as you describe. Seems to have all come from sap wood which won't darken.
