Looking at edge banding 86×36” maple veneered plywood panels that are 3/4” thick. Going to be working in the garage with the large panels on sawhorses and cutting my own 3/4 x 3/4” maple edge banding. Thinking of using a slot-cutting router bit to cut the channel in both the plywood and the maple and then glue up with a spline. Is there a better way to edge band over 7 feet of plywood? I do not have a biscuit jointer or a domino.

3/4" is rather thick for edge banding. It will certainly be visible, if that's your goal.
There are a lot of ways of handing this, including buying adhesive-backed banding made in a variety of wood species. You iron these on. I've done that with plastic banding. You need a trimmer to flush to edges of the banding. There are several available.
No reason you can't just glue it on.
As mj said, you don't really need the spline, but it will help with maintaining alignment. Your spline can be thin and shallow, but just make it snug.
