I am going to glue two 6″ x 12″ x 1/4″ bookmatched peices of curly maple together for a project that I am doing and am wondering what kind of glue would be best for this. I really don’t want to put a spline in it but I will if necessary.

If you clamp it accurately and the joint is perfect....cut some small blocks to get the clamping pressure dead center...you don't need splines, biscuits or dowels.
Glue depends on the function of the piece...hide, aliphatic or resin glue for interior furniture....poly, recorcinol or epoxy for outdoor or boats. Read up on the various clamping and working times pressures required....or just ask once you decide.
I've done a lot of drawer bottoms from 1/4" woods, including maple (I save my scrap and shorts for drawer sides [1/2"] and bottoms) and have used Titebond II for the last 15 yrs, and had no problems at all.
