I HAVE A LARGE CLAROO WALNUT SLAB THAT I RESAWED IN HALF. It exposed a large crack surrounded by black wood that could easily come loose and fall out. I want to keep that wood in the board. Do I use epoxy for this? Which kind? Is the colored epoxy? Black like the surrounding wood?

I fill voids/ cracks. etc with colored epoxy all the time. It works great. I almost always use black because black spots and streaks are such a common thing in almost any wood that your eye does not even notice it. Try to match the color of the wood and your eye will pick up the slightest difference.
I use 5 minute epoxy- I am sure any brand will work but my experience has been with System three or Devcon. Follow mixing instructions and then add A little bit of black pigment- A LITTLE BIT!!- you don't need much and you don't want to dilute the glue. Put the glue into the void- making sure to overfill it. When it dries use a card scraper to scrape it down to the level of the wood. Black pigment- I use Behlen black Master Color- you could also use Universal tinting color from an art supply store. I have also heard that toner from a copy machine works- but I have enough trouble with office machines.....
Done correctly, the black will look so natural that no one will realize that you even did the repair.
I would suggest doing a test before you go for the real thing-
