I recently bought a used Jet thickness planer and the plug on it doesn’t match the 220 outlets in my barn. Can I exchange the plug for one that matches my outlets?

The short answer is yes. There are at two basic types of plugs, the common straight bladed type, but with one or both blades turned 90 degrees compared to a common 110 volt plug, and twist lock plugs with the three or four prongs in a circular layout.
If you look closely at the face of most plugs and outlets, you will see the nominal voltage and amperage for the device cast into the plastic, but some straight bladed outlets only have the information on the back of the device. If the plug and the outlet both have the same voltage and amperage designation they will fit together. A plug or outlet meant for 220 volt service will actually be marked 250 volt, there are no 220 volt devices.
